Carrot Cake Recipe, by request...


The Queen would like this cake I think. Well, at least my guests over the weekend loved it so much they wanted the recipe! So here it is by request, the easiest, yummiest carrot cake ever. It's been adapted slightly from one printed in the New Zealand Edmonds Cookbook, a good old nanna recipe :)

The Perfect Carrot Cake Recipe:

3 Free Range Eggs
1/2 Cup of Oil (I use bran or sunflower)
2 cups plain flour
3/4 cup sugar
3 teaspoons baking soda
1 teaspoon cinnamon
3 cups grated carrot
1/2 cup walnuts, toasted & chopped
1 grated rind of one orange
3/4 cup crushed pineapple in juice
Preheat oven to 180 and grease & line a 23cm round tin. Beat eggs until nice and thick. Gently stir in oil. Sift dry ingredients into the mixture and combine, but do not over mix. Fold in carrots, walnuts, orange & pineapple. Spoon into tin. Bake for 40 mins or until cake springs back when lightly touched. Leave to cool in tin for ten minutes before turning onto a wire rack. When cool ice with cream cheese icing.

Cream Cheese Icing:

2 Tablespoons butter, softened
1/4 cup cream cheese
3/4 cup icing sugar
1 tsp lemon juice

Sift icing sugar into remaining ingredients and beat until creamy.
Yum Yum Yum, Easy and kinda good for you cause it has carrots & nuts in it :)
